Grease Traps

They fall into 3 categories: External underground Grease Interceptor tanks, small interior grease traps (5 - 50 gallons typical), and the newer interior Automatic Grease Recovery Units (AGRU).

Most food service establishments have the small interior type. In 2005 the CT DEP issued a General Permit regarding Fats, Oils and Grease (FOG). The purpose of the General Permit is to require and standardize the routine removal of FOG from all food preparation establishments including but not limited to restaurants, hotel kitchens, hospitals, school kitchens, and bars. The "No Registration - No Fee" General Permit as finalized, covers all Class III and IV food preparation establishments that discharge to sanitary sewers. Although the final enforcement authority will be with the DEP, the municipalities are encouraged to utilize this General Permit to resolve FOG issues at the local level. The bottom line is that by 7/1/11, all Class III and IV food establishments will need to have either an external Grease Interceptor Tank or an internal AGRU in place and being serviced.
